4 large eggs

1/2 cup cherry tomatoes, halved
1/2 cup sliced mushrooms (any variety)

Instructions:

1. Prepare the Eggs:

In a bowl, whisk together the eggs, milk (or water), salt, and pepper until well combined and slightly frothy. Set aside.

2. Sauté the Vegetables:

Heat the olive oil or butter in a large non-stick skillet over medium heat.
Add the diced onion and garlic, sautéing until the onion becomes translucent and fragrant, about 2 minutes.
Add the mushrooms and bell pepper (if using) to the skillet, and continue to sauté until the mushrooms are soft, about 3-4 minutes.
